Egg dumplings

  • 100 g plain flour
  • Salt
  • Water
  • 2 eggs
  • 1 tablespoon oil
  • Chives
  • Salt and pepper


  1. Make a soft dough with the flour, salt, water, and 1 egg.
  2. Bring a pan of salted water to the boil.
  3. Using a teaspoon, scoop dumplings out of the dough and drop into the boiling water, and cook until al dente.
  4. Strain the dumplings.
  5. Blend the second egg with salt and pepper.
  6. Heat the oil in a pan, add the dumplings, add the egg, and combine with the dumplings until the egg sets.
  7. Sprinkle with chives.
