Ingredients

  • 5 cod fillets
  • 5 tomatoes
  • 2 onions
  • 1 lemon
  • 30 g capers
  • 2 crushed garlic cloves
  • 1 glass of white wine
  • 2 tablespoons of olive oil
  • 1 bouquet garni
  • Salt and pepper

Method

  1. Preheat oven to 200°C.
  2. Slice the onions finely. Slice the tomatoes and the lemon.
  3. Fill the base of an oven dish with the onions and tomatoes. Arrange the pieces of fish on top, then cover with a layer of onions, tomatoes, capers, and lemon slices.
  4. Season to taste, not forgetting to add the bouquet garni and crushed garlic cloves.
  5. Drizzle with the white wine and olive oil.
  6. Bake for 10 minutes, then turn the oven down to medium temperature and continue to bake for 25 minutes.
  7. Serve immediately.
