Ingredients

  • 1 egg
  • 1 tomato
  • ½ cucumber
  • 1 carrot
  • 2 slices of wholemeal bread
  • Chives
  • Nutmeg
  • Salt
  • Pepper

Method

  1. Slice the carrot and cucumber into thin strips.
  2. Slice the tomato.
  3. Chop the chives.
  4. Beat the egg with a pinch of nutmeg, salt, and pepper until fluffy.
  5. Scramble the egg mixture.
  6. Sprinkle with chives.
  7. Serve on 2 slices of bread with the vegetables.
